No, Vader couldn't use force lightning, this was covered in the books (he didn't have organic hands). The force was weakened in him compared to what it would have been if he were still human, but he was still formidable because of his immense power to begin with (read the follow up book to ep. 3 for all the info).
Greivous was not force sensitive. He was a general of an army that was attacked by the Jedi. He had superior technology and an excellent military mind- that coupled with his hatred of the Jedi caused him to be selected to become general Greivous (there was a comic series about the clone wars).
And yes, Solo was force sensitive, but not enough to let him consciously use the force (the only place I can recall this being mentioned was in the CCG, both on the cards and as an example of how force sensitivity works in the rule book).
As for the Death Star, firstly remember that the Jedi never posessed such a weapon. I could go on about the Sun Crusher (a ship that could literally fly through a sun and explode it on the way through) that Kyp Durron stole after the Jedi were reformed, but I think I'll just lose everyone if I do. Secondly, the Borg are going to assimilate something like the Death Star pretty damn quick...
Finally, you cannot discount how powerful a weapon the Jedi can be. After Skywalker reformed the Jedi and set up their new base of operations at Yavin, they were attacked by a fleet of Imperial remnant ships. They joined together in a circle and channeled their force power through a single Jedi to hurl a force blast into space, so powerful that it killed everyone on the ships and blew the ships themselves out into the depths of space (although the guy in the middle gets fried). If a dozen Jedi could get close enough to the Borg city they could easily destroy it.
In the end I have no doubts the Borg could defeat the Jedi, and the only way the Jedi could stand up to them would be with a significant army backing them. The Jedi were really just a glorified police force, and only at times of war (20 years before the rise of the Empire to 30 years or so after) did they have access to an army. Pre-clone wars they wouldn't have had the technology. After the rise of the new republic the Jedi were just a shadow of their former order (and had lost most of the knowledge of the Jedi ways). If the Jedi had the clone army to fight with and no separatists/sith to contend with, they could take down the Borg. Otherwise, resistance would be futile.
