Do the math. A two-digit number, written xy, is equal to 10x + y. So when you subtract (x+y) from that number, you are left with 9x. Now look at the symbols besides the multiples of 9 from 9 (9*1) to 81 (9*9). Hmmmm....

Okay - I see the 9 thing, but the symbols are different. How does it know I picked 25 as a start instead of 94? It seems to pick the right one even though these two deliver different symbols. I mean, I know it's something like this but I don't get how it does that part.

25 - (2 + 5) = 18 = 9 * 2
94 - (9 + 4) = 81 = 9 * 9

It doesn't know what number you start with. When you do the math, you'll always end up with a multiple of nine, so those are the only numbers that matter. And if you check, they all have the same symbol.
