I like mine with anything that's available, like chili, corned beef, or whatever. If it's simply an accompaniment for a steak, however, then butter, salt, and sour cream will suffice. And yes, I do chop it up and eat the skin too. If you don't eat the skin, then you're the lowest scum on the face of the earth.

Butter & melted cheese. I prefer it steamed in a microwave rather than traditionally baked because it makes the skin very tasty and the potato moist rather than dried out.

I also like to pour creamy salad dressing on mine.

Here's a good recipe I threw together:

bake some potatoes

cut them in half, scoop out all the potatoey stuff

mash it, mix in about a half-pound of hamburger meat, diced onions, seasonings, butter, and mix well

spoon the mixture into the potato skins, cover with grated cheese, and bake for a few minutes

Mmm-mmm!

I eat mine straight up. Nothing added. Just plain potato.

Butter, broccoli, and sour cream. I also like a salad and a chicken on the side. That's right: a whole fucking chicken, particularly one with rosemary and pepper on it. I eat both with the skin intact.

I like them with sour cream, cheese, bacon bits, green onion, and of course, steak blood from the rare-side of medium rare steak beside it.
